Happy Cinco De Mayo! Add this to your celebration today! This salsa is one of our favorites! The secret to the garlic flavor is using garlic-flavored olive oil. My favorite, easily found, and cheapest is from Trader Joe’s. How do you get that onion flavor? Green onions! But make sure it is only the green part. The white part of green onions is high fodmap such as regular white and purple onions.

Even people that aren’t low fodmap are going to love this and ask for the recipe. And it’s so easy to make it comes together in 5 minutes or less and can last in the refrigerator for at least a week. So go ahead and make this you won’t regret it!

Ingredients low fodmap salsa

Here is all that you need:

  • garlic olive oil
  • lime juice
  • green onions
  • diced tomatoes (drained)
  • fire roasted tomatoes (make sure your tomatoes don’t have hidden fodmaps. I’ve found Trader Joe’s brand do not, but always look at your labels as they can be hiding!)

You will now just empty and dump into your bowl. Open your cans and dump your fire roasted tomatoes straight in. Make sure you drain your can of regular tomatoes (otherwise you will have very liquidy salsa). Cut your green onions into slices (make sure you are ONLY using the green parts).

Now put everything into your bowl, mix well, and place in the refrigerator. I like to make this earlier in the day if time allows to let the flavors combine. Oftentimes though I end up making it for dinner and it’s just as good. So whatever you have time for do not fret!

Low Fodmap Salsa

Enjoy salsa without the HIGH fodmaps of onion and garlic

Ingredients

  • 1 Tbs garlic infused olive oil
  • 1 Tbs lime juice
  • 1 can fire roasted tomatoes make sure not hidden high fodmap ingredients
  • 1 can diced tomatoes drained
  • 3 green onions green part only, diced

Instructions

  • Get large bowl and ingredients ready.
  • Open both cans of tomatoes. Drain your DICED tomatoes and empty into bowl. Empty can with juice of fire roasted tomatoes into bowl.
  • Add 1 Tbs of lime juice and 1 Tbs of garlic olive oil to bowl. Stir all to combine. (if you would like more lime or garlic flavor feel free to add more).
