Happy Cinco de Mayo! If you are looking for that last minute recipe to serve today for Cinco de Mayo you have come to the right place! This low fodmap cheese sauce is a must make! It is so easy to make and delicious as well!

Are you looking for an easy cheese sauce to serve with chips? Are you wanting something to go along with your low fodmap salsa recipe? This is it! And the best part of this recipe is it’s made in the microwave! No slaving over a hot stove while you are waiting for your mixture to boil and thicken. Save the sweat for another day. This easy-to-whip-up the sauce is another family favorite!

Ingredients for cheese sauce

1 block of cheese grated

1 1/2 cups lactose free milk or milk substitute

2-3 TBS butter, melted

3 TBS gluten free flour

First shred your block of cheese. Cabot Cheddar is my favorite as it is naturally lactose and gluten-free. Also, it’s a VT company! I find the blocks at Trader Joe’s (this happens to be my favorite grocery store!). I have never tried it with pre-shredded cheese, but you could give it a go. (Honestly though fresh shredded is always better!) Now get a microwave-safe bowl. Take your butter and melt it. Add in your flour and milk and heat until thickened.

After to consistency you desire stir in your cheese until its’ melted.

And that’s it an easy cheese sauce that is great with just chips, added to nachos, tacos, chicken wherever you find a need for cheese 😁.

Ingredients

  • 2 cups cheese shredded I prefer cheddar
  • 3 TBS Butter
  • 3 TBS gluten free flour 1 to 1 Bob Red Mill is used in this recipe
  • 1 1/2 cups lactose free or dairy free milk

Instructions

  • Gather together a microwave safe bowl.
  • Melt 3 TBS butter covered in microwave for 45 seconds (watch carefully so you don't end up with butter covering your microwave!)
  • Once butter melted combine 3 TBS flour and stir until combined. You will create a roux here.
  • Add 1 1/2 cups milk to your butter/flour roux mixture and stir until combined.
  • Heat in microwave for 2 1/2 minutes. Stir and heat for additional 2 1/2 minutes until desired consistency. Depending on your microwave you may need to do more or less so make sure to check and stir!
  • Once milk mixture to desired thickness stir in 2 cups shredded cheese until completely melted. Now enjoy!
